I keep seeing these DIY ice cream sandwiches made with graham crackers around Pinterest. They look so yummy and easy enough for the kids to help make, so we decided to try them but with a kid-friendly twist.

DIY Ice Cream Cookie Sandwich Recipe — for Kids!

What makes our ice cream cookie sandwich recipe so kid-friendly? A few things…

First, we swapped out the graham crackers for the classic kid-favorite, vanilla wafer cookies. Kids love the sweet vanilla flavor and their little size makes the perfect mini treat.

Then, we swap out traditional ice cream for cool whip. The cool whip is easier for little ones to spread and lighter on the taste buds, too.

Finally, we roll our mini ice cream sandwiches in colorful rainbow sprinkles, because… well, everything’s better with rainbow sprinkles, right?

How to Make Ice Cream Cookie Sandwich

It doesn’t get much easier than this cookie ice cream sandwiches recipe. Just grab some vanilla wafers, spread on some cool whip, roll in some rainbow sprinkles, and freeze!

The best part… you can customize this ice cream sandwich recipe with cookies or sprinkles of any kind.

Make a yummy chocolate chip ice cream cookie sandwich by using chocolate chip cookies instead of vanilla wafers and mini chocolate chips instead of sprinkles. Or, try swapping out the vanilla wafer cookies with oatmeal cookies, sugar cookies, or Oreos. The possibilities are endless!

These little treats are great to have in the freezer for a special snack time or can be made for a special occasion, too. How about making some for your child’s next Birthday party? You can even tailor them to the holiday or party decor with different colored sprinkles.

Either way, your child will love to help you make them. They’ll practice fine motor skills while spreading the fluffy cool whip and rolling the ice cream sandwiches in the sprinkles. And in no time, with just three ingredients and a little time in the freezer, you’ve got an itty bitty homemade ice cream cookie sandwich you pop right in your mouth.


Recipe for Ice Cream Cookie Sandwiches:

Itty Bitty Ice Cream Cookie Sandwich Recipe

Colorful sprinkles and cool whip put a kid-friendly twist on this easy mini ice cream cookie sandwich recipe.

Servings: 12 sandwiches

Equipment

  • icing spatula (or butter knife)
  • small bowl
  • sheet pan (or tray)
  • parchment paper
  • zip-top freezer storage bag (or freezer-safe storage container)

Ingredients

  • 24 vanilla wafer cookies
  • 1 cup (8-oz tub) Cool Whip
  • 1 cup nonpareils sprinkles (rainbow or desired color)

Instructions

  • Spread cool whip on the flat side of a vanilla wafer cookie.
  • Place another vanilla wafer cookie flat-side down onto the cool whip, making a "cookie sandwich" filled with cool whip.
  • With sprinkles in a shallow bowl, roll the edges of the cookie sandwich in sprinkles so that they stick to the cool whip.
  • Place the cookie sandwich on a parchment paper-lined baking sheet.
  • Repeat steps 1 through 3 until all vanilla wafers have been used.
  • Place the baking sheet in the freezer until the cookie sandwiches are frozen solid.
  • Once frozen solid, move the cookie sandwiches to a sealed freezer bag or freezer-safe storage container.

      The only thing I did was spread the cool whip on the first cookie. Priscilla helped put the other cookie on and roll them. Let me know how your toddler makes out if you try it!
