I am beyond excited to announce that I have been chosen to be a “Chief Waffle Officer” for Eggo! Each day this week I will be sharing a creative kid-friendly recipe using Eggo waffles. We’ve been having so much fun experimenting with all of the tasty (and convenient) Eggo products over the last week. And I’ve been having fun making Cliff call me “Chief!”
With my new title, I hope to inspire you to look for easy options, like Eggo frozen waffles, to make your kids’ meals and snacks a little more fun.

Using frozen waffles makes this snack mix recipe so easy to make. You don’t even have to thaw them out. Just cut the frozen mini waffles into approximately 1″ pieces.
With them stacked as in the photo above, I cute each mini waffle into fourths.
Then. you just put all those mini waffle pieces into a big mixing bowl and spray them all lightly with some canola spray
. Toss ’em up and spray again so they’re lightly coated.
Mix the cinnamon and sugar
together in a small bowl
and add that to the big bowl of waffle pieces, tossing them about ’til they’re all coated with sweet cinnamony-sugar – yum!
Finally, you just spread the cinnamon-sugar coated waffle pieces out evenly on a nonstick baking sheet and bake for 20 minutes in a 450-degree oven. Check on them and stir them every 5 minutes or so, and take them out when they’re toasted up, lightly brown and a little crunchy. Isn’t this getting exciting?!
Now you just have to be a little patient and let those waffle pieces cool a bit. It might help to turn them out into your serving bowl to cool. Once they’ve cooled, add your M&Ms
and peanuts
, toss ’em all together, and dig in!
Try to make it last for more than a couple of hours; I bet you won’t be able to do it!
Cliff and the kids couldn’t eat this snack mix fast enough! I even found the kids picking out the cinnamon waffle pieces and eating them first instead of the chocolate candies. Even toddler J.C. loved the sweet waffle pieces for a snack. This is definitely our new favorite snack mix recipe to date.
