Add 2 cups cheese-flavored instant mashed potatoes, 2 eggs, 1 cup shredded mozzarella cheese, 2 green onions (chopped), and 1 teaspoon ground black pepper to a mixing bowl and stir until thoroughly combined.
Spray mini muffin plan with no-stick cooking spray, then use a cookie scoop or spoon to fill each mini muffin pan cup with potato mixture.
Bake at 350 degrees Fahrenheit for 15-18 minutes, or until tops of bites are slightly golden. Cool for one minute before removing and serving.
