Spray pan with no-stick cooking spray. Add 1 onion (chopped) and cook over medium heat, stirring frequently, until onions are soft.
Add 1 (12 ounce) package smoked sausage (cut into 1-inch pieces) to skillet. Cook over medium-high heat until lightly browned.
Add 1 cup frozen peas, 2 cups frozen broccoli florets, and 1 tablespoon soy sauce to skillet and stir to combine. Turn heat down to low-medium, cover with lid, and allow to cook for 5-7 minutes or until warmed through.
Add 1 cup white rice (prepared) and stir to combine. Continue cooking over low-medium heat until heated through.
Before serving, add salt and ground black pepper to taste.
