I Have a Secret About This Stuffed Peppers Recipe!
What’s my secret? It comes in a box. It’s inexpensive. It’s been used for easy dinners for decades. If you read yesterday’s easy dinner tips, you’ve probably guessed that I’m talking about Hamburger Helper®. Yep. I’ve used our old childhood classic Hamburger Helper® as a simple filling for this easy Enchilada Stuffed Peppers recipe. Here’s how you can make it, too…

Easy Enchilada Stuffed Peppers Recipe
Ingredients:
- Cheesy Enchilada Hamburger Helper®
- 1 lb. ground beef (as indicated on the box)
- 1 cup milk (as indicated on the box)
- 2 1/4 cups hot water (as indicated on the box)
- shredded taco cheese blend
- 4 bell peppers
- olive oil spray
Steps:
Prepare the Cheesy Enchilada Hamburger Helper® as directed on the box.
As the Hamburger Helper® is cooking, wash the bell peppers and prep them by cutting off the tops and removing the seeds.
Spray a casserole dish with olive oil spray and arrange the bell peppers inside it.
Once the Hamburger Helper® is done cooking, spoon it into the bell peppers. Sprinkle on some shredded cheese and place the tops back on.
Stuffed peppers can be prepared to this point a day or two ahead of time. Just cover with foil and store in the refrigerator. When ready for dinner, bake in a 375 degree oven for 45 minutes.
Pair with a side salad and you’ve got a delicious and easy dinner!
