A Quick Way to Make the Kids Breakfast FUN!

When I was a kid, a special treat for my sister and I was when mom would make chocolate chip pancakes on a Saturday morning. I remember how special that little bit of chocolate would make the pancakes, and how excited we would get. These days with my daughter, I try to keep her excited to eat and try new things. A new idea I tried out this weekend was using Eggo Waffles in the shape of that well-known Disney mouse: Minnie. The Eggo Waffles were super quick to prepare and perfect for her to pick up and hold herself. No pancake batter or mess to deal with makes a happy mom and a fun kids breakfast.

Mickey is a super easy shape to make using both Eggo Homestyle Mini Waffles and Eggo Homestyle Waffles: two Mini Waffles for the ears, and one Homestyle Waffle for the head. I decided to make a Minnie Mouse for my daughter, since she and her cousin love Minnie! The bow had me stumped for a little while until I remembered how much she loves to dip things in yogurt. I would make the bow from yogurt, and she could dip her waffles in it! As an added bonus, I could avoid using butter or syrup, which makes for a healthier kids breakfast, too! Here’s how I made my Minnie Mouse-inspired Eggo Waffle treat…

A Quick Minnie Mouse Kids Breakfast with Eggo Waffles

Ingredients:
  • 2 Eggo Homestyle Mini Waffles
  • 1 Eggo Homestyle Waffle
  • 11 standard chocolate chips
  • 3 dollops of yogurt

Steps:
  1. Toast your Eggo Waffles.
  2. Place the large waffle in the center of a plate.
  3. Make nose and bow with yogurt.
  4. Add the two MINI WAFFLES as ears.
  5. Place chocolate chips to make remaining facial features: center of ears, eyes, and mouth.
  6. Enjoy your fun kids breakfast!
Sophia was so excited when she saw her plate, she was bouncing in her seat! The yogurt dip was a big hit with her, too.

Of course – What kid doesn’t love Micky and Minnie Mouse.  So simple and an easy way to make the kids breakfast super fun.  Thanks for the inspiration, Laura!
