Remember how I mentioned my tour of the Hospitality and Culinary Arts Programs at Pennsylvania College of Technology? Well not only did I get to have some fun with chocolate, but I also got to explore some fun food science with the Modernist Kitchen Class.
My Food Science Fun at Penn College
As I entered the Modernist Kitchen Class, I saw was greeted by Chef Frank Suchwala. His Chefs-in-Training were busily working around a long metal table – hissing and pounding and fog filled the air.
They were using liquid nitrogen to flash freeze strawberries for Strawberry Basil Goat Cheese Ice Cream. The liquid nitrogen’s temperature is minus 320 degrees Fahrenheit – making the strawberries freeze as hard as a rock so the students could use a spoon or mallet to shatter them.
They also had some fun with freezing gummy bears. (Homemade gummy bears they made during a previous class while learning about liquid solutions and gelatin.) And Chef Frank demonstrated the use of liquid nitrogen to make a quick snack for me – Crunchy Frozen Teddy Grahams.
The little Teddy Grahams create fog when they hit the warmth of your mouth! Can you say, “Most fun snack ever!”?
