Do your kids eat enough fruits and vegetables?  I won’t lie; I know my don’t!  So I’m always looking for ways to get them eating healthier.  In the past I’ve tried a sticker reward chart, a fun video about fruits and vegetables, and a color food taste test.  They’ve all helped, but it’s a continual work in progress.  So I was really excited to be sent a great children’s book promoting fruits and vegetables: The ABCs of Fruits and Vegetables and Beyond.  And I was even more excited about the simple and healthy banana ice cream recipe inside it, but I’ll tell you more about that later.

First, let me tell you a little about the book.  The ABCs of Fruits & Vegetables & Beyond is really like two books in one.  The beginning is a fun alphabet book for kids where each letter represents a fruit or vegetable and includes a fun rhyming verse about it.  And then the last half of the book is like a learning and activity book based on each of those fruits and vegetables with fun facts, recipes, projects, and even jokes.  It’s really like a nutrition curriculum in one handy book.

Anyway, we chose to focus on B is for Banana.  And we made some really yummy and healthy banana ice cream as recommended in the book.  Here’s our spin on it…

Only 3 Ingredients:

  • frozen bananas
  • frozen strawberries
  • sugar free instant cheesecake pudding mix

Kids Making Strawberry Cheesecake Banana Ice Cream at B-InspiredMama.com

Simple Steps:

  1. Have the kids throw a couple handfuls of frozen strawberries in the blender or food processor container.
  2. Then have them throw in a couple handfuls of banana chunks.
  3. Have them scoop in a couple teaspoons on sugar free instant cheesecake pudding powder.
  4. Whiz in the blender or food processor until smooth and ice-cream like.

Our banana ice cream was almost more like a smoothie because our bananas weren’t quite frozen through.  But it was still so yummy!  And awesome to know that the kids were getting in some good nutrients.
