Green Smoothie for Kids
St. Patrick’s Day provides a great opportunity for parents of veggie averse kids to sneak, er, creatively inspire, kids to eat something green. This tasty smoothie is great for breakfast or dessert. And it’s green. But since it’s St. Patrick’s day, that’s cool, right? The secret ingredient?
1 cup of raw baby spinach has only 6 calories but is high in Vitamin A and C (you can get more than half of your RDA for vitamin A in one cup of spinach!). It also has significant calcium and Iron. When blended with fruit into a green smoothie you can’t even taste it but you still reap all those great nutritional benefits. The only trace it leaves behind is the green color….which of course is because it’s a “leprechaun smoothie” (or shake, if your kids prefer).
Lucky Leprechaun Green Smoothie
- 1 cup raw baby spinach
- 3/4 cup milk, milk substitute or water
- 1 banana
- 1/2 cup frozen peaches
- 1/2 cup frozen strawberries
Makes 2 servings
Step 1: Put the spinach and your liquid of choice into a blender and blend very very well. Keep going until all the little tiny pieces of spinach turn into a smooth green liquid
Step 2: Add your banana and frozen peaches. Blend until smooth.
Step 3: Add the frozen strawberries. Blend. Add ice cubes or more liquid until it is the desired consistency.
You end up with a tasty drink that is full of good-for-you stuff. Tell your kids that they get to have green milkshakes for breakfast and I’m sure you’ll be praised as the coolest mom around.
